White Chili

I've had white chili once before and remember it being pretty good.  I took the plunge and whipped up a pot.  I was happy with the results.  I made mine by pulling ingredients from two different recipes to cater to what I like.  If your a soup, stew, or chili kinda person, I hope you'll give this a try.



White Chili
(my concoction)

Ingredients -

1 lb ground chicken
2 T olive oil
3 cloves garlic, grated on microplane or finely chopped
1 packet Knorr homestyle chicken stock (concentrated)
2 (14.5 oz) cans chicken broth
2 (14.5 oz) cans white beans; drained and rinsed
1 small can whole kernel corn
2 tsp cumin
1 tsp onion powder
3 T all-purpose flour
1 tsp chili powder
1/4 tsp Mrs. Dash Italian Medley seasoning
1/4 tsp red pepper flakes (or more if you like it hot)
salt and freshly ground black pepper
Parmesan cheese and chopped parsley is optional

Directions -
  1. In  a large pot, heat oil over medium high heat and add the chicken.  While chicken is cooking, using a spatula (or something that will work) break up it into small pieces. 
  2. Add the garlic, cumin, onion powder, chili powder & the Mrs. Dash to the chicken; cook for a minute or two making sure not to burn the garlic.
  3. Stir the flour into the chicken mixture. 
  4. Add the beans, corn, the chicken stock concentrate, and the cans of chicken broth.
  5. Bring mixture to a simmer and cook for 30 minutes or until the liquid has reduced by about half and has thickened to the way you like it.
  6. Add the red pepper flakes and simmer another 10 minutes.
  7. Season with salt and pepper to taste,
  8. Ladle chili into bowls.  Sprinkle with Parmesan cheese and chopped parsley.
Serves - 4 to 6
Calories - 2085 per pot; if serving 4 = 521 calories per serving;
                                       if serving 6 = 348 calories per serving

Crock-Pot Baked Potatoes

For real!....Crock-Pot baked potatoes.  Who knew?  I'm learning that Crock-Pots aren't just for roasts!  I'm really amazed by all the unique Crock-Pot recipes out there.  So, anyway I made these Crock-Potted....aren't I funny...potatoes and they were good; tasted like a baked potato.  Really nothing special about them other than I loved the fact that I didn't have fire up the oven and heat up the house to achieve my goal.

The Simplest "Baked" Potatoes
from  Fix-It and Forget-It (slow cooker magic)

Ingredients -

4 to 6 large baking potatoes
Olive or vegetable oil
2 T seasoned salt or your choice of dry seasonings
Toppings - butter, sour cream, crumbled bacon, shredded cheese, sliced green onions,

Directions -
  1. Wash and scrub potatoes. 
  2. Rub each unpeeled potato with oil.
  3. Rub each potato with some of the dry seasoning.
  4. Wrap each potato in aluminum foil and place in slow cooker
  5. Cover and cook on low 8 to 9 hours or until potatoes are tender.
  6. Serve potatoes with desired toppings.
Serving size - 1 potato
Calories per serving - 290 for plain potato, 1 T shredded cheese - 100, 1 T sour cream - 25, 1 slice cooked crumbled bacon - 50, 1 T butter - 100
*If you have your potato loaded it will have roughly 565 calories.
